Method
Before preheating smoker, prepare the turkey.
For this, whisk together all the ingredients for the brine in a large container until sugar and salt dissolve completely.
Add turkey and let soak for 8 hours in the refrigerator.
Then remove the turkey from brine, rinse, pat dry and place in a roasting pan.
Stir together all the ingredients for herb butter until combined and stuff 2 tablespoons of this mixture under the skin of breastbone, on each side.
Melt remaining butter mixture in a microwave oven and then brush outside of turkey generously.
When smoker preheats, place roasting pan containing turkey on the grill, close with a lid and let smoke for 2 hours and 30 minutes or until internal temperature of turkey reach to 165 degrees F, basting with remaining butter mixture every hour.
While smoking, fill the hopper with more hardwood every half an hour to maintain the temperature in the grill.
When done, remove the turkey from smoker and let rest for 15 minutes.
Carve turkey breast and serve.
